Enjoy the finest of all hams, Jamón Ibérico de Bellota by Montaraz, in a format that is easy to slice and store. Each acorn infused ham has an unrivaled flavor and intense marbling. This all-natural ham is carefully aged for over three years in the mountains of Spain and is ready to slice and serve. This boneless jamón is cut into two individually packaged pieces and can be sliced by hand or in a mechanical slicer.

Montaraz created this UNICO version of Ibérico de Bellota ham to showcase their very best jamón. They begin with only 100% pure-breed, acorn-fed Ibérico pigs that spend every day wandering the ancient ‘dehesa’ countryside eating grass, herbs and sweet acorns. Only sea salt is used to preserve the hams, with no nitrates or nitrites, you will enjoy only the pure flavor of Jamón Ibérico de Bellota.

Bellota literally means acorn in Spanish. Only a privileged few Ibérico pigs are set free to feast on acorns during the fall and winter ‘montanera’ season because there are a limited number of oak trees that produce the sweet nuts. Each pig enjoys over 2 acres to forage so that they can eat as many acorns as they desire.

Because of plentiful exercise and an exceptional diet, these Bellota hams are marbled with rich, beneficial fats. As they cure for an astonishing three years, the fat melts away, bathing the jamones with incredible flavor. The Montaraz jamón masters inspect each ham, and only when they are perfectly cured are they allowed to be sold.

Montaraz is a member of the DOP Extremadura, a denomination of origin much like a wine appellation. An independent auditor inspects each part of the curing process - from the origins of the pigs, to the levels of oleic acid, to the final packaging.

Montaraz has aged fine Ibérico hams since the 1800s. The fourth generation of the family now supervises the aging of these incredible hams.

Serve thin slices Jamón Ibérico de Bellota on a warm plate to allow its complex flavor to fully develop. Montaraz boneless jamones are cut in half and separately vacuum sealed so that you can slice one piece, keeping the other piece fresh.

You can slice by hand using our holder for boneless hams, or you can use a mechanical slicer. Cover tightly with plastic wrap between slicing sessions. Small amounts of salt residue or harmless mold can grow on the surface in storage, simply cut away the affected area to expose the excellent ham underneath.
