Flexible Knife for Slicing Jamón
Item: CY-25
There is one tool that no ham carver can be without - a long, thin, flexible jamón knife. This specially designed ham knife is made from extremely sharp hardened stainless steel, for cutting the thinnest slices. Yet it is also very light and flexible, so that the blade can curve and bent to reach every part of your Serrano or Ibérico ham.
This knife was designed to do only one thing, carve jamón. The blade has small indentations on the sides, making the ham knife lighter and more flexible, and help it cut cleanly. This full tang knife features stainless steel that reaches all the way to the bottom of the handle for a balanced and durable design.
A quality jamón knife, or "jamonero," allows you to cut from every part of a jamón, yielding more delicious ham. And because of the hardness of the stainless steel, it is easy to sharpen and maintain.
Martinez y Gascón forges their knives in the famed knife-making city of Albacete. They use steel strengthened with molybdenum and vanadium, for a long lasting edge and great durability. Martinez y Gascón is run by Julia Martinez, the third generation of her family to lead the company which was founded in 1945. Her focus is supplying professional chefs and butchers with the sharpest, most durable knives in the market.
Wash your jamón knife by hand and always use a sharpening steel to hone the edge before you slice.
