While roaming the dehesa woodlands of the Spanish countryside, Cinco Jotas's 100% purebred Cerdo Ibérico pigs enjoy a hearty diet of abundant natural acorns, putting on an average of two pounds a day! This unique free-range diet contributes to one of the most distinctively flavored hams in the world.
The smaller front leg of the pig, or paleta, cures much more quickly than other traditional hams of Spain, yet still has plenty of time to develop its own incredible flavor: rich, nutty, and marbled with golden fat. This boneless version is very easy to slice, and is best served in wafer-thin slices.
