This fresh version of Manchego is a customer favorite, with its creamy texture and mild, rich flavor. Aged for just 30 days by the artisans at Villajos, just half the time for an official Manchego cheese. We serve slices of this creamy cheese with wine and crackers, and it is also great for melting on canapes and gourmet grilled cheeses.

When we first tasted the Manchego cheeses made by the Villajos family, they stood out above any other Manchego we’d tried. But we wanted a more approachable version, so we asked them to make a special young style just for us. Baby 'Manchego' was born.

Excellent cheese depends on the best quality milk, and the Villajos family sources milk fresh from local Manchega sheep that wander the fields near their small village of Porzuna. These sheep graze on grasses and herbs, which add complexity to their milk. Within hours of milking, cheese-master Beni begins the ancient craft of transforming the milk into wheels.

This mild cheese is versatile, so much that we use it in every meal of the day! Try a few slices at breakfast with fruit or serve slices as a tapa with a glass of white wine or a cold beer.
