- 12 large scallops
- 12 slices Ibérico de Bellota bacon

Preheat oven to 350°.
Line baking sheet with parchment paper. Place bacon strips on parchment paper; bake until just beginning to get golden around the edges but still pliable, 12-15 minutes. Remove from oven and set aside until cool enough to handle. Turn oven to broil.
Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet. Cook 10-15 minutes or until bacon is cooked through, turning once.
