Made from the milk of Murciana goats that graze among the Pyrenees Mountains in the Catalonia region of Northern Spain, a wet climate with fertile pastures helps give Garrotxa its characteristic fresh, nutty and herbal flavor. The family-owned company that supplies our Garrotxa has discovered an innovative way to prevent this delicate cheese from drying out. They carefully dip the small cheese wheel in a protective black wax to preserve its freshness and prevent cracking around the edges.
