Canapes of Serrano Ham and Fried Orange Segments

Makes 6 servings.

  • 8 1/2 oz of Serrano ham in small, thin slices
    1 orange
    20 salted crackers
    1 cooked egg white, diced
    1 beaten egg
    Olive oil
    6 garden tomatoes


Peel the orange and separate the segments. Dust with flour and dip in the beaten egg; deep fry them. Drain on absorbent kitchen paper and cut in half.

Put a piece of ham and a plece of orange on each cracker. Sprinkle with chives and some of the diced egg white. Add a piece of tomato to each canape and serve.
