After decades without Iberico hams, the USA market is now full of producers exporting their fine pata negra to the US. Redondo Iglesias, based in Valencia, is the latest to bring an Iberico ham to market. A long time producer of iberico in Spain, Redondo has been known for their serrano hams in the American market. Starting in a week, they will add paleta and jamon iberico to their line up. We sampled some of the paleta (bellota) and it was excellent.
