Well it has been awhile since our last entry, but just to catch you up on the latest and greatest news regarding Spanish Jamon: now offers fresh frozen cuts of Iberico de Bellota meat from Fermin. My favorite cut is the pluma, which you can read about here: . COVAP, based near Cordoba, has been approved by the USDA and will begin exporting iberico embutidos and other items beginning in October of 2010. 5J, the top brand from Sanchez Romero Carvajal in Jabugo, is sending over their first USA shipment of Paleta de Bellota in late September or early October.
